Salted Caramel Apple Pie (Vegan)
Shut the front door, you guys. This pie is the better version of an American classic.
So many bakers believe they have to use dairy to get all of their creations to come out tasty, but it's just not true. It's 2018 folks, and there is a plethora of non-dairy alternatives that are just as good as their cruel counterparts. You're a modern, fun baker, right?! Well get with the times, friend and switch to some non dairy baking ingredients!
Don't be intimidated by a beautiful homemade lattice pie. It's much easier than it seems, I promise. My first time doing a lattice pie was terrifying and by the end, I was like... oh! Well that was easy! Sure, you can go buy apple pie filling in a can and pie crust in a box. It'd be a lot easier, but it wouldn't be near as delicious or fun. There's something about creating something from fresh ingredients that you've poured your heart into. So, let's do this!
Ingredients:
--Crust--
*2 3/4 cups unbleached all purpose flour
*4 Tbs Powdered Sugar
*1 cup vegan butter (2 baking sticks)
*1/3 cup cold water
--Filling--
*5 large apples (I used Honeycrisp, but choose your fave!)
*1/3 cup orange juice
*1/4 tsp each of nutmeg, ground cloves, and pumpkin spice
*2 tsp ground cinnamon
*1 Tbs cornstarch
--Caramel Sauce--
*1/2 cup vegan butter (1 baking stick)
*1/3 cup dairy free milk (I used vanilla soy milk)
*1 cup brown sugar
*1 tsp vanilla
*Sea salt
Directions:
1. Cube your butter into small pieces
2. Add crust ingredients to a mixing bowl and mix until a dough forms
3. Place in fridge while you prepare the filling.
4. Combine all spices and orange juice in a large bowl.
5. Peel and cube apples then put in the bowl of spices. Stir to coat, then place in a pot on medium heat and cook until slightly softened (about 5-7 minutes).
6. Remove your dough from the fridge and cut in half. Place one half aside.
7. Flour your counter top and roll out your dough into a circular shape.
8. Grease a 9" round pie/cake pan and place your dough inside. Use your fingers to make sure the dough comes up the sides and slightly over the edges.
9. Make the caramel sauce by combining all ingredients in a small saucepan and heating on medium heat, stirring constantly. Once it bubbles, continue to stir for another minute and then remove from heat
10. Add 3/4 of the sauce to bowl of apples and stir to coat, then dump your apple filling into your pie pan.
11. Roll out the other half of the dough and cut into strips.
12. To weave, just flip up every other strip and lay down a strip perpendicular. Repeat until you have done the whole pie. Using a knife, cut around the pie to remove excess dough, then press each strip down to the bottom crust.
12. Pour the remaining caramel sauce on top and sprinkle more sea salt on top.
13. Bake at 350 degrees for 40 minutes. Let cool for half an hour before serving.
You can top with dairy free whip cream or ice cream for extra yum!
