Cheeze Sauce
A cheeze sauce your kids will eat, and won't even know that it's packed with veggies. I've used this sauce for nachos, mac and cheeze, pretzel sauce, and more! You will definitely wanna keep this one handy!
Ingredients:
*2 medium or 1 extra large carrot, peeled
*2 medium potatoes, peeled
*1 tbs lemon juice
*5 tbs nutritional yeast
*1 tsp paprika
*1 1/2 tsp salt
*2 tsp minced garlic
*3 tbs tapioca starch/flour
*3 tbs Vegan butter/margarine
*3/4 c of water (from boiling the veggies)
Directions:
1. Bring pot of water to a boil, place potatoes and carrots in. Cook until fork tender (about 20 minutes).
2. Place remaining ingredients into a blender.
3. Drain potatoes and carrots, setting aside about 3/4 cup of the water.
4. Put the potatoes and carrots in the blender, blend well until creamy, adding water a little at a time until you reach desired consistency.
5. Serve hot immediately. If you need to reheat, place in a saucepan on low, stirring occasionally adding any water if it has gotten too thick.
You can now add this sauce to cooked noodles, pour into a dish to use as a dipping sauce, or pour over nachos (if using for nachos, add a little chili pepper flakes to spice it up!) Nacho recipe here
