Breakfast Casserole
Leave the quiche behind, because this casserole is so good! Pictured is a plain cheezey casserole, but I've also included directions below on how to make it "loaded"!
INGREDIENTS:
For Cheezey casserole:
*2 blocks medium firm tofu
*1.5 lbs frozen Hashbrowns
*1/2 bag Daiya shredded cheddar
*4 tbs vegan butter/margarine
*salt/pepper to taste
*2 tbs nutritional yeast
*1 tbs garlic salt
*2 tsp turmeric
*2 tsp onion powder
For Loaded casserole add:
*Chopped mushrooms
*Chopped green onion
*Chopped white/yellow onion
*Minced garlic
*Chopped tomatoes
(Add any other ingredients you want, like peppers, beans, etc)!
DIRECTIONS:
1. Drain and press tofu blocks, heat oven to 375.
2. Heat 2 tbs vegan butter in a large frying pan and add the hash browns. Cook until tender (not crispy!) Add salt/pepper to taste.
3. Set half the hash browns aside and put the other half of the hash browns in a greased 8 inch round pan. Squish them down to make a base layer. Place in oven for 10 minutes.
4. Heat the remaining 2 tbs vegan butter in the frying pan and crumble the tofu in (use your hands and just squish the blocks 1 at a time over the frying pan).
5. Add nutritional yeast, onion powder, turmeric, and garlic salt to the tofu and stir to incorporate. Cook, stirring occasionally, for about 10-15 minutes.
6. In a small frying pan, saute the yellow/white onions and mushrooms (or other ingredients, depending on what you're adding to your casserole!)
7. Put the tofu on top of the baked hash browns and spread out. Add half of your sauteed veggies (set other half aside), then spread out the remaining hash browns (set aside from earlier) on top of the tofu. Squish down a little to make sure it sticks together.
8. Turn your oven to broil.
9. Sprinkle the cheeze shreds on top of your casserole and broil for 5 minutes.
10. Remove from oven and place remaining sauteed veggies and chopped green onions and tomatoes on top. Let cool for a few minutes and serve!
I came up with this on a whim Christmas morning and I'm so glad that I did. It was so yummy and was a perfect casserole to feed my family!
