Vegan Taquitos

Make a few for dinner or make a bunch to freeze for meals during the week! Tasty, crispy, delish

INGREDIENTS:

*1 bag of Spanish rice (I used Seeds of Change microwaveable)

*1 can vegetarian refried beans

*1 can black beans or tri-bean mix

*8-10 Tortilla shells

*1 bag faux meat (I used Morning Star pulled pork variety)

*Seasonings (cumin, chili powder, garlic, salt/pepper)

*Salsa

*Cheeze sauce (recipe here)

**Add chili powder or Tabasco sauce to spice it up!

DIRECTIONS:

1. Open can of beans and rinse well.

2. Heat a small amount of oil or some veggie broth in a pan and cook your faux meat. Add your preferred seasonings.

3. Cook Spanish rice per instructions (depending on which one you have)

4. Empty refried beans into a bowl and microwave for 20 seconds.

5. Preheat oven to 400 F

6.Lay a tortilla shell on a cutting board or counter, spread a spoonful of refried beans along the edge closes to you. Add a spoonful each of rice, beans, faux meat. Roll the tortilla shell up starting at the end with the ingredients (don't fold the sides in) until you are about 1 inch from the end. Put a small amount of refried beans on the end of the tortilla shell and press into the roll. This helps it to stick together while baking. Repeat this until you run out of ingredients.

7. Place your taquitos on a baking sheet with parchment paper (or has been greased) seam side down.

8. Make cheeze sauce (recipe above)

9. Bake for 15-20 minutes.

10. Serve with the cheeze sauce and salsa. Garnish with green onion or cilantro!

You can make a bunch of these and keep them in the freezer for meals or snacks later in the week!
