Pumpkin Spice Sugar Cookies (Vegan)

For all you yoga pants wearing, chunky scarf layering, pumpkin spice loving, basic bitches out there...

These are perfect in my book. A soft, chewy sugar cookie topped with a vegan buttercream. You'll need to either give these away to keep from eating them all in one sitting, or eat them all in one sitting and do 7,943 minutes on the treadmill later. Up to you.

Ingredients:

--For the cookies--

*1/2 cup vegan butter softened

*1/2 cup sugar

*1/4 cup brown sugar

*1 tsp pure vanilla extract

*1/4 cup pumpkin puree

Dig the guts out of a pumpkin, remove the seeds, and throw the guts in a food processor until smooth.

*1 1/2 cups unbleached all purpose flour

*1/2 tbsp cornstarch

*1 tsp baking powder

*1/2 tsp baking soda

*1/4 tsp salt

*1 tsp pumpkin pie spice

*3/4 tsp ground cinnamon

*1 tbsp unsweetened almond milk

--For the frosting--

*1/2 cup vegan butter softened

*1/2 tsp vanilla extract

*2 1/2 cups powdered sugar

*1/4 tsp ground cinnamon

*1/4 tsp pumpkin pie spice

*2-3 tbsp non dairy milk

Directions:

1. Add butter to a large mixing bowl and cream with whisk until fluffy.

2. Add sugar, brown sugar, and vanilla. Beat for 1 minute.

3. Add pumpkin puree and mix for another minute.

4. Add dry ingredients and mix until incorporated.

5. Add almond milk and mix until dough is formed.

6. Put dough in freezer for 15 minutes. Preheat oven to 350.

7. Scoop out a heaping tablespoon of dough and ball it up by rolling it around in your hands. Roll it around in a little bowl of white sugar. Place the ball on a cookie sheet and gently press it a little bit with a flat surface like a cup or glass.

8. Bake for 10-12 minutes.

9. Make the frosting! Add all ingredients except for the milk to a mixing bowl and mix until combined.

10. Add milk 1 tablespoon at a time until you get a fluffy whipped frosting.

11. Once cookies are cooled, load them up with frosting and enjoy!
