No-Bake Cookie Cups

These are peanut buttery, chocolatey, and super easy to make with simple ingredients you probably already have.

We've been binge watching the show "Nailed It!" on Netflix, and my two girls were inspired to bake. They wanted to know what they could bake with little assistance (they're 6 and 7), so no-bake cookies were the perfect fit, not to mention they're dad's favorite cookie.

INGREDIENTS:

*1/4 cup melted coconut oil

*1/4 cup almond milk

*2 tbs cocoa powder

*1 cup white sugar

*1/4 cup peanut butter

*1 1/2 cup rolled oats

*1/2 tsp salt

*1 tsp vanilla extract

*handful of vegan chocolate chips


DIRECTIONS:

1. In a medium saucepan, bring coconut oil, almond milk, sugar, cocoa powder, salt, peanut butter to a boil.

2. Reduce heat to low and let simmer for 5 minutes.

3. Stir in the vanilla, remove from heat.

4. Stir in the oats until incorporated.

5. Measure 1 tbs cookie mixture in mini muffin tin (or place on parchment paper if you don't want the muffin shape). Add a chocolate chip to each one (optional)

6. Put in the fridge for 30 minutes until cooled, remove from pan and serve!


WARNING! These are super addicting, but you "should" share. You don't have to, but it's super easy to eat them all by yourself :)

Great recipe to make with the kids, have the kids make by themselves, or to quickly satisfy a chocolate craving!
