Vegan Fudgey Brownies

Mmmmmmm brownies... Pretty much everyone I know likes brownies, and these will definitely hit the spot! They are SUPER rich, which is good, 'cuz you might only be able to eat one or two instead of the whole pan. That way you get to save some for later!

INGREDIENTS:

*1/4 cup unsalted almond butter

*1/2 cup dark brown sugar

*1/3 cup pure maple syrup

*1/4 cup + 2 tbs melted coconut oil

*1/2 cup unsweetened cocoa powder

*1/4 tsp salt

*1 tsp vanilla extract

*2 flax eggs (2 tbs ground flax mixed in 6 tbs water, set aside for 15 min)

*1/4 cup + 2 tbs flour

*1/4 cup vegan chocolate chips (I like the Kirkland brand!)

DIRECTIONS:

1. Make the flax eggs, set aside.

2. Preheat oven to 325 F and grease or line an 8x8 baking pan.

3. In a medium bowl, mix together the almond butter, brown sugar, maple syrup, and melted coconut oil.

4. Add cocoa powder in 1/4 cup increments, scraping down the sides of the bowl as you mix. Add vanilla and salt, stir a few more times.

5. Add in flax eggs, mixing until incorporated. Then add flour a little at a time until flour patches aren't visible.

6. Stir in the chocolate chips.

7. Pour batter in your baking pan, smoothing out until batter is in an even layer, then bake for 25-30 minutes.

8. Let cool for 30 minutes, slice, serve, and enjoy!


Ooey, gooey, rich fudgey brownies! You could even stick a candle in the middle of these and serve them as a birthday cake!
