Chickpea Pot Pie
Made with a savory garlic crust and stuffed with marinated chickpeas and veggies. This comfort meal will leave you satisfied, but still wanting seconds!
My mom used to make the best chicken pot pie, so of course I had to come up with my own way to veganize it! I've taken a basic pie crust recipe and made it garlicky and flaky perfection. This pot pie is the perfect meat-free alternative for your dinner table.
Ingredients:
--For the Filling--
*1 cup veggie broth (homemade recipe here)
*1 can chickpeas
*1 pound bag frozen mixed veggies (or chop your own fresh!)
*1/4 cup flour
*1/2 tsp salt
*1/4 tsp pepper
*1 tbsp nutritional yeast
*1 tsp onion powder
*1 tsp garlic powder
--For the chickpeas--
*1 tsp salt
*1 tsp olive oil
*1 1/2 tsp poultry seasoning
--For the Pie Crust--
*3 cups flour
*1/2 cup unsweetened almond milk
*2 tsp garlic salt
*1/2 cup vegan butter (one stick)
Directions:
1. Drain and rinse 1 can of chickpeas. Place them in a small bowl with the spices. Cover and marinate overnight in the fridge.
2. In a medium pot, add veggie broth and frozen veggies, bring to a boil.
3. Reduce heat to low, add spices and flour. Simmer, stirring often.
4. For Pie Crust, cube the cold butter and add to a mixer with the remaining ingredients. Mix until a dough forms. It should be crumbly, but when squeezed in your hands it should come together. If it feels too dry, add a splash of almond milk.
5. Divide the dough in 2/3 and 1/3 segments. The top portion of the pie will need less dough then the bottom, so set that portion aside.
6. Lightly flour your surface and roll the dough out to 1/4 inch thick in the shape of your pan.
7. Preheat oven to 350.
8. Lay your dough in an 8x8 greased baking pan, forming the dough up the sides.
9. Pour your veggie filling in and then pour in your chickpeas.
10. Roll out the other portion of dough for the top. If you have any cute cookie cutters, you can roll out one corner thinner and cut out a cute shape to put on top like I did.
11. Place dough on top of the pie. Using a fork, squish the bottom crust and top crust together. You can use a sharp knife to cut off any excess dough.
12. Cut two slits to vent and bake for 20-25 minutes.
13. Let cool slightly, then serve!
