Vegan Biscuits

Flaky, buttery, soft yet crispy, perfect biscuits. And yes, they're vegan (who'd-a-thunk?)

Homemade biscuits, a staple in any baker's arsenal. They're the foundation for biscuits and gravy and they're perfect to compliment any meal (including upcoming holiday dinners!). Bring these along to your next family get-together and laugh silently as they grab for another and another, not knowing they're vegan (insert maniacal laugh here).


You need just a few simple ingredients and you're on your way to the delicious taste and aroma of homemade biscuits!

--Makes about 8 biscuits--

Ingredients:

*1 1/2 Cups all purpose flour

*1/4 tsp salt

*1 Tbsp sugar

*2 tsp baking powder

*6 Tbsp cold Vegan butter (I use Earth Balance or Melt brand)

*3/4 cup unsweetened almond milk

Directions:

-Preheat oven to 400 F

-In a mixing bowl, combine flour, salt, sugar, and baking powder.

-Cut your vegan butter into small pieces and add to dry ingredients.

Using your fingers or a pastry cutter, combine until butter is mixed in and looks like small peas.

-Add almond milk and mix (set 1 tbsp milk aside for brushing the tops of biscuits).

-Gently knead dough on a floured surface until it comes to a nice ball.

-Pat it down gently and fold in half. Repeat two more times until you've folded and patted a total of 3 times.

-Using a cup or biscuit cutter (about 2 inches), cut out your biscuits and place on a greased baking sheet. Repeat until you've used all of your dough.

-Brush the tops with the almond milk you set aside earlier.

-Bake for 15-17 minutes.

There you have it! Super simple! If you have kids, get them involved. My kids love making biscuits with me and I truly believe getting kids in the kitchen early on helps not only to develop skills, but also provides an amazing bonding time for the family!
