Tofu Scramble

Follow the steps below and you can create your very own healthier version of a classic dish!

Tofu.... I know it seems "gross" or scary.. but trust me, once you make it correctly (it took me several unguided attempts), you will love it! Tofu doesn't really have a flavor, which is great, because it takes on any flavor you put on it. You can make it sweet, savory, or salty. It's a great easy staple to always have in your plant based arsenal.

There are many kinds of tofu and each one is used for different recipes. I'm going to go over the most common ones today. Silken tofu would be used for things like homemade ranch dip or sauces because of it's more liquid consistency. Extra firm tofu is good for frying due to it's lower moisture content. Firm tofu is good for seasoning and adding to potato salads. Medium firm has a higher water content and is good for egg replacer in breakfast dishes like casserole and scramble or even "egg" sandwiches.

For the Tofu Scramble recipe, you will want to use Medium Firm tofu (use 1 or 2 blocks depending on how many people you are feeding).

Drain the tofu by cutting open the package and emptying the water. Stand the tofu up

and let sit in the carton for about 10 minutes or you can press it in a tofu press. Sometimes I will set it on a plate and put a cast iron pan on top too, to get more water out of it. Drain the water out again.



Put 1 tablespoon of coconut oil in a frying pan and turn up to medium high heat. Once the oil is melted and the pan is hot, crumble the tofu with your hands in to the pan. Once it's all crumbled in, add the following spices:

* 1 Tbs Nutritional Yeast

* 1 Tsp salt (I like black salt)

* 1/2 Tsp black pepper

* 1/2 Tsp Garlic Powder

* 1 Tsp Onion Powder

* 1/2 tsp Turmeric

Mix it well with a spatula or spoon. Let cook on medium high heat for 10 minutes, stirring occasionally as not to burn. Adjust seasoning to your taste.

See how it resembles a scrambled egg texture? It's perfect to put in a burrito with veggies and salsa or to eat next to a side of toast. I like to top mine with tomatoes and chives or sometimes I will saute some mushrooms to stir in.






Tofu doesn't contain cholesterol, sugar, trans or saturated fat making it a great way to start your day!
