Tofu Noodle Bowl

If you've ever been college, living with multiple roommates, or just been broke AF, you've had the famous cup-o-noodles. That microwaveable styrofoam cup that contained what we thought to be a food product, and we ate it because it was cheap and easy. Well, here is the grown up version, so if you're still eating the other version, stop it right now and make this!

Ingredients:

*1 package Soy Sauce flavor Ramen noodles (or you can use brown rice noodles)

*1 package extra firm tofu

*1 small bag frozen peas & carrots

*2 tsp poultry/chicken seasoning

*1 tsp turmeric

*2 tbsp corn starch

*1 tsp garlic powder

Directions:

1. Drain and press your tofu. If you have a tofu press, use it, if not you can press your tofu by simply placing the block on a plate and setting something heavy on top (like a cast iron skillet). Let it sit for 20-30 minutes.

2. Cube your tofu into small pieces.

3. Add all of your seasonings to a bowl, mix, then add cubed tofu. Toss to coat evenly. Taste test (it's safe to eat uncooked tofu) to make sure it's to your liking. Add seasoning if you wish.

4. Heat 1 tbsp oil in a pan and add seasoned tofu. Stir occasionally until the outsides are browned and crispy.

5. Bring a pot of water to a boil and add your packet of noodles. Halfway through cooking, add bag of frozen peas & carrots.

6. Add your seasoning packet or if you're doing plain noodles, add soy sauce and sesame oil.

8. Serve in a bowl and top with tofu.

There ya have it! Delicious grown up food that will make you pull out those old photos and yearbooks!
