Vegan Blueberry or Strawberry Muffins

I love any kind of berry, but blueberries and strawberries are my favorites! I could put them in just about anything, because they’re good frozen, warm in a baked good, or freshly picked. They’re full of antioxidants and make for a perfect kid-friendly snack!

Baked goods… Oh, how I love a good pastry, muffin, donut, etc, so why not fill one up with delicious berries?! Choose your favorite berry and put them into this muffin recipe for a delicious treat!

P.s. I snuck in some hemp hearts into this recipe to give them a little more nutritional value and you can’t even tell they’re there!

INGREDIENTS:

Makes 12 muffins

*1 cup soy milk

*1 tsp apple cider vinegar

*2 cups all purpose unbleached flour

*2 1/2 tsp baking powder

*1/4 tsp baking soda

*1/2 tsp salt

*1/2 cup + 2 tbs sugar ( I use raw cane sugar)

*1/4 cup + 2 tbs oil (I used canola)

Make it healthier buy substituting unsweetened applesauce (same measurement)

Blueberry muffins pictured were made with applesauce, strawberry were made with oil

*1 tsp vanilla extract

*Zest of 1 lemon

*1 1/2 cups fresh berries (whole blueberries or chopped strawberries)

*2 tbs hemp hearts (optional)

DIRECTIONS:

Preheat oven to 375 F

  1. In a 2 cup liquid measuring cup, add apple cider vinegar and soy milk. Mix well and set aside.

  2. In a large bowl (I used my stand mixer bowl), add flour, baking powder, salt, and baking soda. Mix well.

  3. Add sugar, oil, vanilla, lemon zest and hemp hearts to the soy milk/vinegar mixture in the measuring cup and stir well. Then pour the cup into the dry ingredients in your large bowl.

  4. Mix together a few times, being sure not to over mix.

  5. Fold in your berries. . The batter will be VERY thick, that’s okay!

  6. Using a spoon, scoop out mixture into a greased muffin pan, filling each section nearly full.

  7. Bake for 20 minutes

  8. Let cool for 10 minutes and enjoy! Store in an airtight container in your pantry.

Pro tip: Try not to eat all the batter… its dangerously delicious.
