Healthy Taco Salad
Tacos... oh tacos! There are T-shirts, memes, jokes, restaurants, and aisles in markets dedicated to the famous food. You can make so many variations, so that's what I did!
INGREDIENTS:
I didn't give exact measurements because everyone likes their tacos spiced differently, so play with it and add a little at a time until you get the taste just right for you!
*Green Leaf Lettuce
*Cilantro
*Tomatoes
*Green Onion
*Black Olives
*Avocado
*Extra Firm Tofu
*Wayfare Dairy-free Sour Cream
*Lime Juice
*Salt/Pepper
*Cumin
*Chili Powder
*Poultry Seasoning
*Cooking Oil (olive, canola, coconut, etc)
DIRECTIONS:
1. Drain and press 1 block of tofu (remove tofu from packaging, place on a plate with something heavy on top for about 20-30 minutes).
2. Season tofu by sprinkling on cumin, poultry seasoning, garlic salt, chili powder to taste. Start with small amounts and add to your liking! Tofu is ok to taste before it's cooked!
3. Cube and fry in a pan, stirring every few minutes to ensure each side browns.
4. Chop lettuce, tomatoes, cilantro, green onion, black olives, and avocado then add them to a bowl.
5. Make dressing by combining 3-4 tbs sour cream with the salt, pepper, and a few squirts of lime juice. (This amount is for a single serving, adjust accordingly)
6. Place a portion of cooked tofu on top of your salad and add the dressing. Stir it all up and enjoy!
There you go, peeps! Healthy taco salad with all the amazing flavor, but much more nutritious and much better for your waistline!
