Fluffy Vegan Buttermilk Pancakes

Little pillows of melt-in-your-mouth goodness that everyone will drool over!

I get asked often how it's possible to make pancakes without eggs or dairy milk. It's so easy with common ingredients in your pantry, so you don't have to run out an buy a box of pancake mix. Then people ask if they taste as good, and the answer is a HUGE YES! Honestly, you will probably like these better :)

INGREDIENTS:

*1 1/2 cups unbleached all purpose flour

*1 1/2 tbs baking powder (yes, tablespoons!)

*3 tbs sugar

*3 tbs vegetable/canola oil or melted vegan butter (you can use 3 tbs applesauce to make them oil-free, the consistency will be slightly different).

*1 tsp vanilla extract

*1/8 tsp salt

*1 1/2 cups dairy free buttermilk

(Put 1 1/2 tbs white distilled vinegar OR apple cider vinegar in a liquid measuring cup. Fill up to the 1 1/2 cup line with non dairy milk (like almond or soy) and let sit for 5-10 minutes)


You guys, the magic of homemade buttermilk is just that, magic! Making your own buttermilk is easy (no need to run to the store for expensive buttermilk) and adds "fluff" to your baking! I use it in my Buttermilk Breakfast Cake recipe and it surely "takes the cake!". Use it in waffles, cupcakes, or breads!

DIRECTIONS:

1. Mix all ingredients together in a bowl.

2. Using a 1/4 cup measuring cup, pour batter onto a hot non stick pan or griddle.

TIP: For bigger pancakes use 1/3 measuring cup. Take your time pouring the batter, and only pour in the center of the pancake, don’t spread it out, it makes for thicker pancakes! I usually count 8-10 seconds for each pancake pour. My griddle is at 350.

3. Flip once you see air bubbles popping on the surface of the pancake.

TIP: Don’t “spank” your pancakes with your spatula! I know some of you do this, but when you smack them, they flatten out. Just let them do their thing and cook without being smacked!

4. Cook for 2 more minutes until golden brown.

5. Serve and enjoy!

You can add berries or chocolate chips to the batter before cooking if you are wanting a little fancier of a pancake. Top with vegan butter or peanut butter and your favorite syrup (be careful, some contain milk)!

If you have leftovers and want to reheat in the morning without it getting rubbery, put it in the toaster! Toasting a leftover pancake give it a little crisp to the outside making it much tastier then just popping it in the microwave (microwaving will leave your pancake rubbery). You can also toss them back on your griddle to heat them up!
