Vegan Feta Stuffed Mushrooms
These little delightful appetizers are a perfect comfort food, party food, or a side to compliment any dish!
For the Feta:

Crumble a block of drained and pressed extra firm tofu into a food processor then add the following ingredients:
*1/2 tsp Garlic Powder
*1/2 tsp Onion Powder
*1 tsp Lemon Peel (zested)
*2 Tbsp Olive brine (black or green)
*2 tsp Lemon Juice
*1 Tbsp Italian Seasoning (or fresh chopped oregano, parsley, basil)
*2 tsp Salt
*1 Tbsp Olive Oil
*2/3 Cup Refined Coconut Oil
*1 Tbsp Rice Wine Vinegar
Pulse your food processor until all ingredients are combined well. Place the mixture in a sealable container and put in your fridge for at least 8 hours.
After refrigeration, remove container and fluff feta with a fork until it begins to crumble and resemble Feta Cheese.
Purchase your favorite mushrooms (my favorite are baby bellas), and gently pull the stems out of each mushroom. Placing them cap side down onto a baking sheet, fill each mushroom with feta. Bake at 350 for 10-15 minutes.
Place on top of a bed of kale or other green for presentation.
This feta recipe makes a lot! So be prepared to use it in lots of delicious recipes. Below are a few of my favorites!
Greek wrap: (Pictured left)
Add olives, chopped romaine, feta, pistachios (or any other nut/seed), tomatoes, cucumber, black pepper, and lemon juice to a large wrap or tortilla shell. Roll it up and take it on the go or eat it right away if you just can't wait!
Feta Pizza:
Add kalamata olives, pesto, fresh basil, tomatoes, and red onion to pizza dough and cook per dough instructions. Top with feta after pizza is done baking (the feta will melt in the oven and lose it's texture). If you're looking for something a little heartier, add your favorite vegan meat (like Gardein brand chick'n strips).
Greek Salad:
Same as wrap, but ditch the shell!
There you have it folks, there are plenty of other things you can do with this feta, so get creative! Use it on crackers for a quick, filling snack even! The possibilities are endless!
