Crispy Potatoes
Oh, the magic of potatoes! They make vodka, cheese sauce (recipe here), soup, shepards pie (recipe here), hashbrowns... oh the list goes on and on! For such a underwhelming looking veggie, it sure is powerful!
They have zero fat, are full of vitamin C, potassium, and vitamin B6! Quit letting all those fad diets tell you to not eat potatoes, they're amazing!
INGREDIENTS:
*Peeled potatoes (depending on how many people you're feeding, you choose how many potatoes you will need!)
*Sea Salt
*Black pepper
*Olive Oil
DIRECTIONS:
1. Peel your potatoes and either cube, or slice them. I sliced mine in thick pieces for this recipe.
2. Pat the pieces dry with a paper towel. This helps them to brown better.
3. Put in a bowl and drizzle some olive oil in. Stir to coat. Don't season just yet!
4. Lay them evenly on either a cookie sheet with parchment paper, or a raised air frying sheet pan.
4. Bake at 425 (no more, no less!) for 45 minutes.
5. One done, remove from oven and THEN sprinkle your salt/pepper or whatever seasoning you've chosen. Salt brings out the juices, which would make the potatoes damp again while they're cooking. This would result in them not being crispy or brown.
Serve with a main dish, or dip them in a tasty dairy-free ranch or even just plain 'ol ketchup!
