Chickpea Masala

I've never made Indian food before, so this was new territory for me! It turned out pretty good, even though I held back on the spices 'cuz I'm a bit of a wussy.

INGREDIENTS:

*1 Tbs Olive Oil

*1 Small onion, finely chopped

*1 tsp minced garlic

*2 inch piece of ginger, peeled and finely chopped

*1 Tbs Garam Masala spice

*1 tsp paprika

*1 tsp turmeric

*1/2 tsp cayenne pepper (optional)

*2 cans drained and rinsed chickpeas

*1 can of full fat coconut milk

*2 cans diced tomatoes

*1 tsp cornstarch mixed in 1 tbs water

*Salt/pepper to taste

*Cilantro (optional)

DIRECTIONS:

1. Heat olive oil in a large pan and add onions. Saute for a few minutes until onions are translucent.

2. Bring 3 cups water to a boil, and add 2 cups white rice. Cover, reduce heat and cook for 20 minutes.

3. Add garlic, ginger, and spices, stirring for about 30 seconds.

4. Add chickpeas and diced tomatoes, stir and simmer for 15 minutes.

5. Stir in coconut milk, simmer for 5 more minutes.

6. Add in cornstarch/water mixture to thicken the sauce, simmer for 5 minutes.

7. Serve on top of rice, add fresh chopped cilantro, enjoy!


This meal is warming, full of flavor, and I even had extra sauce to store in the fridge to put on top of noodles later this week!
