Avocado Toast with Pistachios
So simple, yet so yummy. They say that millennials have created the avocado toast phenomenon, so for that, I'm proud to be a millennial! Avocado contains good-for-you-stuff like potassium, fatty acids, and good carbs! Did you know that avocados are a fruit and they contain more potassium than a banana?!
INGREDIENTS:
*1 Ripe avocado
*2 slices vegan bread
*Pinch of minced garlic
*Salt/pepper to taste
*½ tsp nutritional yeast
DIRECTIONS:
1. Slice avocado open and spoon out into a small bowl
2. Add garlic and spices and mash up
3. Place bread in a toaster and toast to your liking
4. Spread avocado mixture thickly onto each slice of toast
5. Add Chia Seeds for extra Omega-3's, or nuts (like pistachio's pictured), for protein!
