Teriyaki Tofu and Brown Rice

This is a super quick and easy meal to make and its cheap and tasty! It’s basically a quadruple threat.

The whole family loved it. Don’t be scared of tofu! It’s a very versatile protein and once you figure out the steps to prepare it correctly, you will fall in love. So get over that tofu-is-for-hippies stereotype and give it a try!

INGREDIENTS:

*1 Package extra firm tofu

*1 bottle teriyaki marinade (I used Panda Express Mandarin Teriyaki Marinade Sauce)

*Some chopped garlic chives or green onions

*Cooking oil (I used coconut)

*4 cups of water

*2 Cups dry brown rice (I like short grain)

DIRECTIONS:

  1. Drain water out of tofu package. Set your tofu block in a pan or dish, and place something heavy on top (or use tofu press if you have one). Let it press for 15 minutes. Remove tofu and place on cutting board.

  2. Cut the tofu into 1/2 inch steaks.

  3. Place tofu steaks in a shallow dish with 1/2 bottle of the marinade. Make sure each piece of tofu has marinade on it (you can use a marinating brush to get all the sides and edges). Put in the fridge for 30 minutes.

  4. In a medium pot, boil the water and add brown rice. Reduce heat to low, cover and cook for 35-45 minutes.

  5. In a frying pan, heat up 1 tbs cooking oil until hot. Place tofu steaks in the oil. Let fry each side for 3-5 minutes. Continue to flip and cook until you get your desired crispy-ness. (I like my edges to be a little charred).

  6. Serve over brown rice and drizzle with some of the marinade (heat it up before drizzling). Then top with chives or onions!
