Oodles of Zoodles

First of all, the name is super fun, but secondly, it’s pretty tasty! This dish is perfect if you’re looking to cut down your carbs or processed food intake, or if you just want something light and healthy!

INGREDIENTS: Serves 2

*2 zucchinis

*1 can diced tomatoes

*Italian seasoning

*Minced garlic or garlic powder

*Salt/Pepper

*1 Can chickpeas

DIRECTIONS:

  1. Use a spiralizer to make your zucchini into noodles. You don’t need a fancy expensive tool for this. Mine is this super small, easy to store one and it works just fine! (Pictured left)

  2. Drain and rinse can of chickpeas. Put in a sauce pot with the diced tomatoes and spices (to taste) and heat on medium low, stirring often.

  3. In a medium sauce pot, boil water and add the zoodles and cook for about 3 minutes (that’s all it takes! Anymore time and they become squishy). Strain zoodles and put on a plate or bowl.

  4. Spoon out your chickpea tomato sauce generously and enjoy!

Pretty simple and easy to make. This meal is great because you don’t get that super “full” feeling that you do with regular pasta.
